Description:	Harvest is exclusively hand-made. Vinification: after destemming, the fermentation starts in wooden barrels. Aging lasts about 11 months. After a light filtering the wine is bottled.


Producer’s details:	The Simcic family works 5,4 hectares of vineyards near Vipolze. They grow Merlot and Cabernet Franc, and their wide selection of white wines includes Rebula, Sauvignon, Tokaj, Chardonnay, Beli Pinot, and Sivi Pinot. Their wines have won a number of awards. The philosophy of their wine-making is based on an almost manic care of the vineyard. All operations are hand-made and no chemical substances are used. Some of their wines don't even undergo filtration before being bottled.
